The original model that started this idea off (my Imperial Ice Speeder) is currently on the Lego Ideas site, but I'm considering replacing it with these models instead, although I might have to lose the Interceptor (using the Star Wars licence would really reduce the chances of the sets ever being made).

I could almost imagine that every base that uses these got several of each model standing around without a cockpit and they just need one cockpit per pilot so that if his/her ship or tank gets damaged too much, he/she can just release the cockpit lock and fly back to the base for a new vehicle.

That was pretty much the idea. I remembered that short-lived sci-fi series "Above & Beyond" where the Hammerhead fighters had detachable cockpits, but they only attached to one vehicle. I just took that concept to the next level.
