For convenience: He's a lean, but not malnourished, earth pony stallion with a grey stetson (cowboy hat) on his silvery hair, blue-green eyes, an auburn coat (DM later said 'dark brown'), and a clay pitcher cutie mark.

To be fair, MLP ponies seem to have magnet hooves. Which Doc has demonstrated in a previous image while holding up a reflex hammer.
