As always an amazing picture of an amazing ship.  

I am not sure if you have seen and/or heard this before but it sounds like they were considering the Enterprise 1701-E to be another Galaxy class  . According to information from USS Enterprise (NCC-1701-E) | Memory Alpha ; following Star Trek Generation, a six-foot filming model for the Galaxy-class USS Enterprise-D had been modified to have the registry number read "NCC-1701-E". Penny Juday, an archivist at Paramount Pictures, had no explanation for this change which is shownon the TNG Season 2, Disc 6 : "Inside Starfleet Archives". It turned out that the change was done at ILM by John Goodson prior to crating up the model after completion of Generations, presumably assuming that the new Enterprise might be a Galaxy-class ship as well and having the number changed over already would save whoever did the special effects the trouble of having to change it over themselves. 

Well as we can see that did not happen; but it seems like someone had the same idea you did about continuing the movie with a Galaxy class starship. At least it would of been more consistent with Star Trek: DS9 and Voyager were we see Galaxy class vessels being used as opposed to the Sovereign class which is not seen in the series.

I'd really like to see a modernized Galaxy class, with an interior that looks less like a hotel.

Then you might be interested in Mad Koi Fish's Onimaru design; which is Galaxy class refit with Sovereign era aesthetic. 

 There is also a GALAXY Class Refit Concept 1 ,  GALAXY Class Refit Concept 2  by Phaeton99   and a Proposed Galaxy refit  by Galen82 . Overall from my humble opinion it seems like fans know how to build better Star Trek starship designs than the people who work on the shows.

This one gave me an idea for a project I think you would do really well. It could be the Nebula-class USS Melbourne being repainted from test ship yellow to star fleet grey prior to its loss at Wolf 359. Originally the Melbourn was the Large-scale test ship for the Galaxy and Nebula class War drive and Nacelles as well as would test frigate type Nacelles. WHen designed it was roughly 85% similar to with the Nebula-class in regards to the interior arrangement and payload so it was defacto the prototype.

You should send these to LEGO. As far as I know, this is how they release special fan-designed sets. There is a WALL-E robot and a Saturn-V rocket which were designed by fans and got officially released by LEGO.

Way back when...

I had just gotten back from Germany and was reconnecting with my wife and daughter. Due to circumstance, they'd been unable to go over with me for my first tour. Anyway, I'm watching the first-run repeats of TNG and my then two-year-old daughter was on my lap. Never one to really talk to me, it was a watershed moment when she looked up at me and smiled. "Daddy," she said, and pointed at the TV - and her smile got bigger. "Starship Enterprise."

I about wept as my nerdling came of age in that moment.
