Cylinders.
Rotate them by the Y-axis by 90 degrees, and then go into side orthographic view.
Then using the vert-selection mode, drag down all the vertices of the cylinder 2 vertices below the middle vertices.

Like, how did you make the head and feet all nice and high poly, and the side are super flat, I remember seeing a tutorial on it, but I can't remember what to do.

I think the most important thing when it comes to making models which are high-poly but still flat, is that you need to have perfectly positioned edge loops.
