Description
This is one of the dessert cakes we make where I work. It is an iced angel food cake. The cake is frosted in a non-dairy whipped icing with mint and green food coloring added. The cake is also garnished with fudge drizzle, cake crumbs, and chocolate mint candy.I'll be making a lot of these for St. Patrick's Day!

It was very long and hard work as I decided to make a chocolate sponge with chocolate butter cream in the centre and whipped cream on top, yet I couldnt find the electric mixer thing so had to do the whole lot by hand! The butter cream was good but the cake was a bit hard and the cream obviously too rich so not much was ate

I've never made it (I've heard its rather hard, but i don't know) but if you get a chance, try it. Only a sliver though, its ridiculously rich. It's kind of like arroz con leche but in cake form and without rice. I HAVE made arroz con leche and it's easy and immaculate. Quite a lovely dessert.

Thanks! Actually this cake is better than most for your hips.. since it's angel food cake and non-dairy frosting. But you're right, it's still full of calories!
