Description
This is one of the dessert cakes we make where I work. It is an iced angel food cake. The cake is frosted in a non-dairy whipped icing with mint and green food coloring added. The cake is also garnished with fudge drizzle, cake crumbs, and chocolate mint candy.I'll be making a lot of these for St. Patrick's Day!

Fudge drizzling can sometimes be tricky... depending on if you heat it to the right temperature and how well you can maneuver the drizzle over the cake...

The extent of my decorating skills consist of opening a can of icing and spreading it on with a knife. That's probably why I love watching you so much: it's inspiring (even if I don't have the time to experiment with decorating more myself at the moment).

Mint is my favourite flavour - I've always wanted to make a satisfactory mint cake and this looks fantastic! The fudge icing all dripping down over the mint frosting looks so yumaliscious *dies from deliciousness*

I accidentally put mint extract instead of almond in my buttercream frosting for a birthday cake a few weeks ago- after freaking out for a minute, I couldn't help but think of this cake and drool a little! *giggle*

Yeah, something tells me it would have been much better with almond! The mint didn't quite go that well with the buttercream texture and marshmallow fondant! Hehehe.
