Much as I appreciate TCW as a show sometimes I lament that they just upsized certain classes instead of creating proper, like, battlecruisers for the CISΒ

It was more of a resource management reason than creating more designs for the Separatists. The Providence and Recusant models were scaled to the same bridge as the Munificent, which was much larger proportionally to the character models. If anything I think if it wasn't for ROTS they would have retconned the smaller ones entirely.
