ο»ΏFinally! I have planned this for like a while now, but there was always something I wasn't satisfied with. I still am not exactly satisfied, but at least I seem to quite like this...I guess.Anyway, the most breathtaking and amazing fight scene in the history of animation *_*

In the art book it says they did it to differentiate between Zuko and Azula both symbolically and during their fight.

Not directly but blue fire is hotter than orange and Azula is a prodigy of high class. Probably only Iroh and Ozai were still stronger than her (since they still had more experience and knew more techniques) and she was only 14.
Blue flame shows just why exactly she is called a prodigy and how much power and potential she has.
If not the end of the war and her breakdown, she would most likely be known as the most powerful Fire bender in history. Not Avatar or even future benders from Korra series could ever use blue flame even though most of them know advanced techniques like lighting and re-direction.
She was in her own league and so far no one can match her. Ability to produce blue fire just strengthens the statement.
And in all honesty I hope no one will ever learn it unless they really are good. Amon mentioned that Mako has potential, I disagree and will rage if he by some chance will learn to use blue fire.

that had crossed my mind, but i wasnt entirely sure, so i figured why not ask!
yes, i (and everyone for that matter) noticed how powerful she is. yet i do believe that she is not the only one who has that kind of potential. i believe that someone else could definately produce blue fire, especially if they are suspected to have high enough potential. as for Mako being that person, im not entirely sure

That's mostly how I understood it so if my theory will be proven wrong later by creators, I apologize beforehand 
But I believe it should be accurate.
Some people believe that Azula always had a lot of rage inside of her so that could rise the temperature of her flame. Though then again Zuko was always angry and never produced blue flames.
I do agree, it is possible. I just hope that whoever it is, they really are worth the title and are skilled. Azula was exceptional in almost every area: bending, physical strength, acrobatics(not Ty Lee level though) and intelligence. It is a bit hard to imagine someone better but not impossible
Also blue flames could be because of her intellect. She might have figured out some trick to it
After all every advanced bending like lighting, metal bending and blood bending have some small tricks. Metal bending requires to focus on earth pieces inside of it while lighting needs full control and concentration. Blue flame might have one of those mysteries too that needs to be solved and right now Azula is the only one who did.
There are a lot of possibilities as to why it could be blue but outcome will be the same: she is special and talented

They gave Azula a blue flame to show that she's more powerful than Zuko, and also to distinguish her attacks when they fought. This comes with the fact that fire that's hotter than typical red is colored blue.
The red/blue symbolism aspect came later into the mix, but is actually subverted in the energybending sequence.

They didn't explain it in the show, but if the temperature of a flame gets up high enough (around 1300 degrees Celsius), the flame turns a blueish white. So, Azula is able to create a much hotter flame than most other firebenders.
Plus, it looks awesome.

Azula has lighting, which is blue. And we all know that the animators just wanted an excuse to have multiple fight scenes with the orange/blue color motif contrast.
