I actually find it trickier to color grayscale since you have to keep adjusting the color but it's easier to render in grayscale.
I find grayscale helps me to focus on just shading & rendering so I won't get distracted in choosing different skin tone colors to use. I do grayscale if the artwork needs to have a more realistic look (￣▽￣」)
