in the game world, it's a fond reference to a former aide, in a previous age, called Darktooth. Back then Dunkelzahn was known as Mountainshadow.
Shadowrun is very fond of oddly German-named dragons. The oddest is Haesslich (which translates to 'butt ugly'). By dragon in SR standards, Haesslich also was a serious underachiever, being only a corporate employee in upper middle management (security director at a local branch of United Oil), so maybe it's his self-loathing showing or something. ^^
The one dragon that basically runs Germany, however, is called Lofwyr. Because ... why not. I guess.
