yeah, though Dipper and Mabel were part of it, the main problem was the same reason Soos was looking for a girlfriend in the first place, his need for a date to his cousins engagement party.

yep, Mcgucket's ability to build robots is impressive, plus Soos would of already known about his skill from the Gobblewonker, and we know that he is crazy enough to do it since he built a Gideon-bot, a homicidal pterodactyltron, and is currently making a Death ray.

Ok so it is set soon after she is turned human, It is a slow day at the Mystery Shack, Dipper and Mable are out on a random adventure, Wendy is at her post reading a magnetize, Soos is in the break room and Stan is pacing in the gift shop wondering were the tourists are, Wendy is about to comment on his pacing when the door to the gift shop opens, only to reveal a strange pink haired girl in a Japanese school girl outfit.
Wendy questions the girls choice of clothes, only for Stan to interrupt to welcome her the the Mystery Shack and to immediately tries to sell her stuff, the girl (Giffany) says that she is only looking for Soos and asks if he is here, Wendy says he is in the break room and points to the door on the other side of the shop, Giffany rushes to the door only for Stan to block it and tell her that she is not allowed back there... unless she buys something.
annoyed Giffany agrees and buys the closest item (with money from a ATM that Bill let her hack before turning her human), which just so happens to be a randomly placed Machete, Stan lets her into the back while Giffany holds the Machete in a unintentionally menacing manner, then a close up on the door while the flowing sounds are heard, Giffany calling Soos name in a playful manner, Soos yells Giffany's name in shock, this flowed by the sounds of running, things breaking, Soos then run's out the door threw the Gift shop and out of the Shack with Giffany close behind yelling "You can't escape my love Soos" and still carrying the Machete never thinking to drop it.

I thought of the Machete part because of these scenes from Yandere anime i seen in the past, as for the chase, since Giffany has not had a physical body for long and other factors i would say they would both eventually need to catch there breath's after a few minute's.

I actually think your idea is better than what I originally came up with having Giffany meet Soos, Mabel, and Dipper at the Mystery Shack initially. This way Soos will be able to spend time with her alone during the beginning and won't have the kids there to persuade him in any way.

Yeah, plus if Soos and Giffany end up lost in the woods (very likely with what's going on) that could lead to some bonding time before they find there way out, plus you could have some fun with having them run into some of the creatures that live in those woods, plus it would be funny seeing how Stan and Wendy would react to something like that happening right in front of them.

Mabel and Dipper are walking back to the Mystery Shack, looking rather dirty and beaten up.
"...I mean, it's a very simple concept to understand: when I tell you not to touch the gargantuan death worm, then don't touch the gargantuan death worm!"
"Well, how was I know he was going to be in such a bad mood?"
"He's called a 'death worm' for a reason!"
"Well, i don't like to judge people based on their names."
"It's not just a name! It's what he is! Or did you not notice when he tried to eat us??"
"Dipper, just let it go; it's all in the past."
"Yeah! 15 minutes ago!"
"That's still the past!"
"Why do you keep saying 'past'??"
"Why do you keep lifting your arms up when you yell??"
"You're doing the same thing!"
