I find it interesting that the comments are all talking about flame temperature producing different colors but the first thing I thought about was that different metals produce different colors in fireworks.

Actually blue burns hotter than orange, and white burns the hottest. And the color of the flame is dependent on the type of fuel involved in the combustion. So in this version of the Human Torch, Johnny's body is using a different type of energy source to produce the flame.
