Well the main would be probably Canon, from what I heard Nasu proclaimed that if Shirou and Shiki would meet the world would go KABOOM they are sorta kinda polar opposites I guess.

Well as far as I remember their outlook at lives are Extremely different and there is no way in Heaven or Hell that they would get along. Shiki values life while Shirou is ready to throw his life away at a drop of a hat. Shirou would probably drive Shiki up a tree with his constant attempts at sacrifice.
