Just some questions if you don`t mind. On technical sode, not exactly quality-related.
Is the camera located at operator`s head position? Because it looks somewhat too far back, I think.
Why have you chosen "frontal window" monitor setup? It seems that the periferal vision is heavily limited in this config. Is it in-universe tech limitations, or just design choice?

Yeah, that particular picture was taken with an 85 degree field of view to get more of the cockpit in the shot (Sketchup's default is 30 degrees), so definitely art technique for that part. The camera is also not located at the pilot's head position, but instead is in the top right corner as high up as it can go to get more of the scene in. So, it does stretch the scene quite a bit to fit a lot of stuff in there. I will say the chair is a piece of crap though cause' I can't design comfortable chairs for the life of me,
As for the cockpit's monitor interface, it's mostly design choice. The idea is that the monitors are actually a secondary/supplementary addition in the cockpit. A pilot would normally be wearing a helmet with a heads up display that projects the mobile suit's view onto the helmet's screen with all necessary screens available. But if for some reason they are piloting this mobile suit without said helmet, These secondary monitors and consoles provide a (limited) view the pilot can use to see for continued operation. As such, the cockpit's kind of a mix of advanced but limited high tech and durable but lasting low tech solutions.

If the monitors are backup feature - that makes sense. Allways thought that it is strange that so few mecha designs use augmented reality interfaces for situational awareness or just for "glass cockpit" effect.

Might be some of that art technique, fore-stretching or some such. like the result of a panoramic lens.
I like it. I look at such artwork and the word "HOME" pops into my entire being.
However, I too thought that the view inside the c'pit was:
a.) that of a chair with the controls mounted into the front edge of the arm rests, supported by one metal leg.
b.) inside a 360* spherical holo-display...

Yeah, was definitely technique to squeeze as much in as possible. As for your notes...
a) Unfortunately, design constraints of the cockpit area prevent the panoramic style cockpits of UC Gundam where the chair is supported on the metal leg, etc., which reduces shock for the pilot. If I had given myself a larger area to work with it's certainly possible, but I wanted to make as tight a space as I could.
b) On that note, that's why I didn't go with the panoramic cockpit style of UC mobile suits. A spherical cockpit would be cool and but impractical on the design I've made in terms of the amount of space it would be taking up. Holo-displays are certainly on the table for future revisions to this cockpit, though. Like a half-sphere that wraps around the entire cockpit seat, projected around the pilot. I do have room for that.
Here's an external shot of the cockpit. It partially slides out and the central console flips up (with the monitors swinging up to the roof of the cockpit) to allow a pilot quick and easy access into the cockpit. So when it closes all up, the pilot is secure in the space. Not for husky or claustrophobic people,
