I think it'd be nice if she could have a friend who she knew would uhm.... always be with her, no matter how many years go by. ...You know... If that's ok with you....."I like to think when he's not getting into Mischief, Discord likes spending some quiet time with his 1 and only friend.
Consider this my contribution to the "Twilight is now Immortal but her friends are not" trend. A little less morbid than the other ones out there perhaps XD
My headcanon is that Discord only likes Fluttershy and isn't friends with any other of the mane six and doesn't even get along with them very well. He is not enjoying this conversation... for multiple reasons.

Discord grumbles: I believe I established last week that she really was as soft as a marshmallow... my changing her into one before I ate her probably had something to do with that.
Fluttershy whimpers softly, pressing the softening mass in his middle: Now Applejack is inside?
Discord burps: Mmm-hmm. She really does taste like apples. Now can we please change the subject from my dining habits?
Fluttershy gently brushes his belly: Oh ok... It's just... Can... can I be next..? *she blushes fiercely* If... if that's ok..
Discord is in mental shock: (She's a vore?! Oh great, I just had to befriend one of the weirdos!)

That is so sweet of Fluttershy. Now I'm imagining Discord becoming a renegade once Fluttershy passes, living the life of a hermit who doesn't have the will to practice any good nor chaotic intentions. However... there comes the day when Twilight (the alicorn) finds herself in a perilous situation, and Discord swoops down out of nowhere, saving Twilight from certain danger. Once they're out of harm's way, Discord turns to leave. Wearing a black hooded torn cape, he begins his snap animation before Twilight stops him and asks him, "Why did you help me?".
Discord responds, "On a day that I will forever remember, an angel asked me a favor...

Oh no, I don't. I just come up with these scenarios on the fly. There are some pictures that just invoke these possible fanfic ideas to me, but I don't have that kind of writing skill. I'd be really glad if an actual fanfic writer picked up on one of my ideas and wrote a full-blown story with it though.

But...age spells are confirmed to exist. There's no way in hell by the time they're in their 50s or 60s Twilight wouldn't have them down pat. As long as they don't irreparably damage their friendship to "I hope you die," levels, all of them are also immortal.
