So just a small tutorial to show you how I shade and what I do
(this could be a bit more detailed and less messy but I didn't really spend time on it.. tutorial purpose only.)
Art is mine and the reference picture is from google, copyright goes to it's owner
Used Photoshop CS6 and a wacom tablet.

Between steps 4 an 5 do you just add more and more layers on top with different colours?

I mostly don't really use that many layers. But it's basically just adding colours and details (:
My layers for a typical (realistic) drawing are:
lines
mane shading
mane base
tail shading
tail base
body shading (3 layers - base blocking, first layer of shading, details)
body base
BG (can go up to 10 layers xD)

Do you have examples of the seperate shading layers on a drawing? If you just upload the PSD to sta.sh then I can look to my hearts content at how you put them all together?

It's just a matter of trying out different things too though (: just try, practice and don't care if it's perfect, it took me 3 years of digital painting to get where I am now xD
look at lots of different shading tutorials on youtube, da and anywhere (: You can do this
