I think the 2nd makes the most sense, followed closely by the 3rd. I would say that maybe some "clock" features in the circle may help. It might be worth seeing although it might be too busy. I think a clock might explain that you're reverting something.

How about you could use the 3rd icon on folders and such like in a sort of svn fashion. So that you know where changes have been made. and give you an option to revert them by choice, (i.e. revert changes 1 and 3 and leaving change 2 unreverted)

Having said that an exclamation mark maybe be better for that. It might be interesting to explore the idea though.

I agree that the second option does explain the function better. The First one just looks like a normal "undo" function and the third looks like a "refresh" function.
