Why is that? Even Celestia and Luna are mortal. As alicorns, they just have considerably longer lifespans than a regular pony. Besides, keeping the mane six mortal allows for them to eventually pass on their knowledge to the next generation.

They are mortal. It's stated in "The Journal of The Two Sisters". Alicorns just live a /very/ long time.
As for the last bit, I would say it slightly different. It simply took Celestia 1000 years before she /needed/ to find a pony to pass them on to. Until that point there wasn't any need to pass them on. I would even venture to say that's why she started her own school for the 'gifted', so she would always have a supply of powerful/gifted potential candidates to choose from if anything ever came up.

Well, I won't consider it canon until it's stated in the show, and maybe not even then, unless they can do it in a convincing enough way.
And I find it kind of hard to believe that it took 1000 years for a danger that needed the elements to pop up, since now they seem to pop up every other day in the hell-scape known as Dream Valley Equestria.Β Maybe they did have the rainbow of light or the flutter ponies' Utter Flutter from G1 to keep the nasties at bay.

'The Journal of The Two Sisters' is a page for page reproduction of Celestia and Luna's diary from the show according to Hasbro. So I'm going to count it as canon.
As for the danger bit, think about how often they have had to actually use the elements. Only like three or four times, and most of those times were only because of repercussions from long ago events. The rest of the time the problem was taken care of by themselves. So it isn't /that/ far of a stretch to think that it could have been quiet for 1000 years with only minor problems.

No, sadly the comic itself points out there dead and she barely visits there graves and doesn't even know if she will return. So would she waste the time to reanimate there rotting corpses? Nope, dead, and tidal action soon will send there coffins to the rocks below and smash them open so the fish and the swimmers at the beach below can swim among there rotted bones and splintered coffins.
