What I usually do for these poses is take a look at a horses skeleton and look at how the joints connect/move and
imagine their limitations. If you take these limits and exaggerate them a bit you can generally end up with a very interesting pose. Give it a whirl, its a great exercise
Also, something useful I've noticed on my own: Try posing your character on the edge of its balance, like they would fall over if they moved into it more. It seems to make the finished product more alive, like its really in motion.
