After sharing some methods with nam-o I thought I might as well make a little animal-eye tutorial, and since other people have mentioned it as well.I make no claims to the most efficient or effective method - this is just a few simple tricks I learned over the years that I thought you might enjoy.
In Corel Painter X but could easily be adapted to PS.

Np ^^ I really would have never thought of making an eye that way! And Some of things on there I can easily do with my photoshop! And it's easy to understand and the result is great!
