If you do some deep research into the occult, you could see how it'd be possible. Zelda would be more rooted in the occult than it would be in mainstreamed science.

Maybe it collects the oxygen from the water around you and forms a micro-film of air around the user's face.

maybe its the way amphibians breathe through there skin, its possible that(since there is magic in the zelda series)it could have formed to his skin and allowed the separation of oxygen from hydrogen, and allowed it to form with nitrogen... or it could just be special

Well, it's about as logical as creating an explosion, teleporting, making yourself invincible, or shooting an arrow with pure light at your enemy. And since when is talking trees, lttle fairies, giant rock monsters, and fish-people logical? This is what I agree with you:
