Description
A flourless chocolate cake covered with ganache then wrapped in chocolate ribbons and dusted with cocoa powder. I burned the seams a little with the torch trying to press them together. I should have turned it to get a picture of the good side. the chocolate ribbons are a little hard to handle; one must be quick and wrap with minimal touching or you will leave finger prints.Related content

That cake looks amazing!! You wouldn't by any chance divulge your recipe for the cake, would you? I've got a gluten allergy and therefore am always looking for new ways to cook without flour.
I can understand it if you don't want to share your recipe though. Your cake is just amazing

Thank you, I don't mind giving out the recipe.... I just have to find it, however, I don't have any of my books or notes in my possession.... I can however ask a few of my friends I learned that with for the recipe. You may also look online anywhere searching for Flourless Chocolate Cake.

thanks. its a technique called ribboning. you take fluid chocolate and thinly spread it on either cooled marble or the back of a sheet pan (youll hav to stick the sheet pan in the reefer for a sec to let it set abit), then when its the right state of solidity, you take a putty knife and scrape it off in ribbons. then you can ruffle and fold and what ever and place it on the cake or what ever it is your decorating. only down side of it is you hav to work fast to keep your hands from melting the ribbons or leaving finger prints.

it was however i did burn my arm on the torch while i was wrapping it in the chocolate ribbon.

it wasnt too bad. it was a bubble flame left over when i shut it off. when i burned my arm, i just shook my arm off, blew out the left over flame and went back to work to finish for the classes deadline.

oh. i would like a professional camera but in a fast paced class, you don't really have the time to get the perfect picture. plus, when the product is on an ugly sheet pan or a dirty work table, a blurry background is the least of your worries.

we always holler at the culinary side when they bring over some 'extra' sheet pans because they beat the hell out of em; warping, dings, dents, etc. they also usually try and keep the good ones.
