Description Caramel mouse served inside a puff pastry bouche. decorated with piped caramel sugar trellis mirrored by a chocolate piped trellis and chocolate and raspberry sauces. Platings class was so much fun

thanks. they may be similar but there are soo many different variations to the trellis, all dependent on what look you want.

platings class was a fun one, so much creativity involved. i miss it.

The caramel design on top is just mind-bogglingly delicate and beautiful! I love the chocolate "shadow" on the plate beside it. The whole design makes it look very elegant and light. I really admire people who can make food and make it LOOK as good as it tastes. Amazing work!

thats not what it was meant for though. its supposed to draw you in with visuals and then you eat it, making sure you savor its evry bite that is hopefully evry bit as good as it looked. but thanks anyways.

see, the problem with that is, youll never fully enjoy it. yeah its pretty, but its meant to be pretty AND tasty. just be like most of my friends, if its pretty, take a pic before you dig in. i wanna be a pastry chef to use at least 4 of the 5 senses when designing platings; sight, smell, sound, touch (with tongue of course) and taste. i wouldnt be the first but i would be an addition to the few that are.

thanks. i know, a couple things that will help with that: study art and art composition, and also learn new techniques with food. skill/experience takes time to establish, ive had over a year of actual classes on it. that and i also find myself in the kitchen playing with food. in fact, i just made a poached pear dessert served with ice cream (store bought, i dnt have an ice cream maker) drizzled with a syrupy reduction of the poaching liquid. it turned out pretty well.

im a little weird that way. i usually see something in the store and immediately start thinking about what i can do with it. in my head i have a few recipes and ideas i wanna work out to make a finished product of. a couple are truffles, i have a mouse one but its actually a friends that needs to be redone. i just think food for some reason.

Sometimes homework pays off

At my old job, for a wedding, not only did my boss do a 5 tier cake covered with henna designs, I also had to do 250 cookies with similar designs :S
