Description croquembouche made of pate a choux profiteroles dipped in caramel stacked on top of almond nougatine. decorated with caramel spun sugar, sugar rose, and royal icing.

these are usually filled with pastry cream, then set on the table with a small hammer for guest to break off a cream puff.

the spun sugar is simply the traditional decoration for a croquembouche. its not really meant to be eaten, jst the caramelized sugar coated puffs. its also decorated w/ jordan almonds and some more sugar decorations. all i had time to do was the one rose and a few leaves.

they werent filled, so it was pretty much jst decor.

thanks. mainly its just for show, so they werent filled with anything. if i made it to actually eat, they would be filled with pastry cream, whipped cream or mousse. it is fun to make though.

thanks. this was actually before getting into pulled sugar. i was bored and chef has some sugar patties out under a light to play with when we were finished.
