Well, Simmons does use the rocket launcher alot, so I always thought of it as his iconic weapon, but since Caboose's iconic weapon counts as tanks (it does to me, he's the only character I can remember to use a tank in battle and survive), the teams still need evening.
If you count Tex (with herself), then Donut and Lopez need signature weapons too: Donut takes a needler and Lopez gets a machine-gun, porque Êl es el pesado!

In one of the extras in I believe the season 4 or 5 dvd, he mentions using the needler because it matches his armor, though he never uses one in the show; but there's no reason he can't be a specialized grenadier with a needler, which works because both weapons make an explosion.
