Kajyu — Ja-pan Number 2 Bread

Description This is my first attempt in making bread from scratch... and I'm quite happy that it turned out really well. This was made in a rice cooker... that's right a rice cooker. The recipe was from the anime Yakitate Japan (which is a pretty funny anime about baking).

Here's the recipe for anyone who would like to try making their own Ja-pan Number 2 bread:

You need:
Enriched flour 1 ½ cups
Salt 1 ½ teaspoons
Dry yeast 1 teaspoon
Milk (slightly more than) 1 ounce
Butter 1 ½ tablespoons
Water 6 ounces
Sugar 1 ½ tablespoons

Throw in all the materials and knead it thoroughly. When it’s not longer sticky, form the dough into a round shape. The first fermentation… leave it in a warm place (86 F) for 60 minutes, and it will expand. The next step is to pull out the excess gas that built up during fermentation.

Don’t pull out the gas by pushing it. All you need to do is drop the dough from a height of about 50 centimeters. After pulling out the gas, begin the second fermentation (also for 60 minutes), then put the dough into the rice cooker.

Now, all you have to do is to close the lid and push the switch. Following the first cooking, turn it over and cook it again. After the second cooking, turn it over again and cook it one more time. After you cook it 3 times, it’s done. Good with butter!

You can put egg in the recipe if you want. Adding powdered green tea will give the bread a nice aroma.

I did a croissant of 8 or 9 layers. It was a bad idea (i need blizzard hands ), but they were delicious.

Good job with the recipe. I enjoyed mine with crunchy goobers (peanut butter to be exact).

Thanks. I have to agree that peanut butter really goes well with bread, especially if you add Nutella for that desired extra sweetness.

I kind of want to try a few of the breads from Yakitate Japan too... Especially that doughnut that Azuma made in Monaco.

It didn't taste like most ordinary bread. It's more compact, like a bagel I suppose. I do remember that it tasted great with butter.
