what one would be used for a champagne roan ?

Roan can appear on any variation of Champagne. They're caused by different genes, so horses can have both at the same time. You can have Classic Champagne Roan, Amber Champagne Roan, or Gold Champagne Roan.

think my horse is the gold verison, though he also has dun genetics, he tis very handsome with his stripes and gold eyes(eye in icon)
