why are there multiple j/ sounds and symbols is there a major difference in pronunciation?

Yes, there is a difference. The small 'y' hiragana changes the way you pronounce it. So ji + ya = ja, ji + yu = ju, ji + yo = jo. With all the 'j's in hiragana put together, you get ja, ji, ju and jo (no je).

Ja = jaw
Ji = jee / gee
Ju = jew
Jo = joe

oh sorry I meant for the D's and Z's, ji is there in both.

Oh, no worries^^ Yes, both sound exactly the same, however the ji in D's is rarely if ever used. More often than not, when you hear a ji, it's the Z's ji.
