lol, the weird thing? BBQ Master is supposedly Delgado Master at a later point in his life, since Delgado Master was his last regen at the time.
Ainley Master eventually got a new set of regenerations when he expunged the corrupted Trakenite DNA from his body in the New Adventure novel: First Frontier.
As a result, his new form resembled Actor Basil Rathbone.

Because, if I recall correctly, the previous body was his last regeneration. (Or one of his last.) He stole this body, and the next one. (Roberts) I'm not sure how he became Jacobi and Simms, but I'll go look that up somewhere.

^ He become Jocabi and Simms because the time-lords resurrected him, and gave him more lives so he could fight in the Time war. Jacobi was the body he had in the time war, Simms is the next one after that.

Actually, the Yana body was implied to be his second incarnation of his second set of regenerations. When talking to Martha about the fob watch, he said that he was "a naked child found on the coast of the silver devastation". I'm guessing that after fleeing the Time War going to the far future, he regenerated, for whatever reason, into a child, before using the Chameleon Arc on himself, and took on the name "Yana".
I'm guessing that the reason for this was so that, as a child, he would have decades to open the fob watch and become the Master again.

Question! Why are all Doctors earth ponies, and the Masters get to be different species? Is there a logical reasoning behind it or?

Well, this version of the Master stole Nyssa's father's body. (If I recall correctly.) The Doctor has been hopelessly influenced by earth folks and I'm trying to reflect this in his designs.
