You could just use a hand saw/hacksaw/jeweler's saw to saw as close to the design as possible, like I showed you with the blade. Instead of staying with the same method throughout the whole knife, I decided that it would probably be a good idea to show another way to do this.
This method can be used on the entire knife, if you have any type of drill. As you can see I marked where I wanted to drill and then using a 1/4" bit I drilled around the outline.
Next all you have to do is go back with a saw and cut the metal in between the holes. If you don't have a saw you can use a chainsaw file or triangle file to cut the pieces off.
It's a good idea to use a drill press rather than a normal drill, but if you don't have drill press this works as well.

I normally use a bandsaw to cut out the handle shape. I might try this to see whats easier.

A bandsaw is a lot faster and better than this way. Assuming you have a decent one.

I recently did this same thing when I was making a metal Iris... then I used tin snips to cut in between the holes, and grinded it down to a smooth circle.

Snips work a lot better than a file and even handsaw, depending on how close you have the holes drilled. If you are really good you can connect all the holes and not have to worry about any of that. I'm not that good though.

You probably do a better job than me. I wish I had one of those freakin awesome heavy duty bandsaws that can cut through vehicles. That would make cutting out handle a lot easier. xD
