Nobody says that you have to make miracles like headshoting a Giant Scout to be a good Sniper.
The reason why he gained his bad reputation is because he’s one of the classes that can either do his job right or pretty much don’t do anything at all. The fact that he’s a primary pick of most of unskilled players don’t help to improve a stereotype about a Sniper on MvM.
If you can’t land many headshots but still want to play MvM,
Do NOT play on advanced maps or above. People will want you to change your class or start a votekick as soon as they will notice that you can’t do your job good enough for those missions.
Take a practice on easier maps.
On Advanced and Expert Mann Up maps there’s a big chance that you’ll get kicked if you have less than 5 tours finished and pick a Sniper. Thanks to that “every Sniper is bad” stereotype, there’s not a lot that can be done about it, even if you appear to have a right loadout and upgrades. I can only recommend to finish at least those 5 tours as a different class and then try your luck as a Sniper.
Speaking of loadout and upgrades:
Heatmaker, Machina and default Sniper Rifle are the best choices.
Do NOT use Sydney Sleeper. Its mini-crits can be easily replaced by a Jarate, Scout’s mark and Soldier’s Buff Banner. Sniper's full crit on headshot obviously deals more dmg.
Secondary weapon – Jarate. That’s always an extra mini-crit and slow on the enemies if necessary.
Mele – Doesn’t matter much, since there’s a rare opportunity to use it. I personally use Bushwacka, because it makes a great combo with a Buff Banner against tanks.
Upgrades: Sniper’s job is to take cover and kill enemies from a distance, so any resistances and any health-regens aren’t most important (the only real thing that might be a threat to him are robo-spies).
Sniper’s primary weapon is a priority and it’s the best to start a game from an explosive headshot upgrade.

I never vote kick snipers. If they suck or not (I can see that on wave 1). I tell them to change class.

I'd like to point out that explosive headshots do work with the sleeper. At least the last time I tried it worked, not too sure about now.

I found out that a demoman-sniper combo (if both are really good) Is SUPER AWESOME, i tried it and we went trough it like nothing.

Those maggots are gonna get a lesson (or two)!
Peronally, I alwyas prefered Machina as my rifle, due the upsides are great, saving some money, and the downsides aren´t important on MVM at all (You know, the multiple kill sound, the bullet trace and only scoped shot), and I never felt comfortable with the Heatmaker (tried some times, and never used it again). Also, I HATED using the Huntsman, I was killed too much times per wave.
And I´ve never been kicked for being Sniper/Kicking a sniper. Because those are great for taking down robots from far; nad the only thing that angers me is when half the team is sniper, If I can´t convince anyone, I just disconnect. (I´ve never played Mann up)
Let´s see what happens next!

#1. It all depends from what you are comfortable with. I personally used Machina for a prety long time, because I loved that +15% to the damage on full charge
#2. You should give it a try again. Its buff is really awesome, since you don't lose your focus when you reload.
#3. Huntsman is a really bad choice, man.

I agree, I only started using Sniper in MvM after I had a good # of tours under my belt due to the stereotype they have.
I loved going onto a server, having someone immediately try to votekick me until someone said I had 20+ tours and to let me try. I kept the bots aside from scout hordes all penned up by the spawn to the point that the engineer moved the dispenser from the heavy to back by me so I didn't have to move after my ammo canteens were used up.
That guy shut up really well after that.

But seriously, sniper is as capable a class for taking out giant robots (with the possible exception of giant scouts) as demo is. A fully-upgraded Sniper Rifle will do 900 damage per headshot at full charge along with explosive damage to enemies nearby AND adds a slowing effect to enemies.
Also, the legendary jar of piss. Communicate properly with a Buff Banner Soldier so you don't throw Jarate just as he uses his Banner (unless you need to slow down a Giant Scout).

Sure thing. Also there are things that Sniper is better at than Demo and vice versa.
Both of them deal massive damage, Demo probably even more of it with his crit stickies, but a good sniper can make a lot of frequent headshots, when Demo has to reload and place his stuff.
On the other hand Sniper is one of the most skill-based classes, when in Demo's case it's just run & shoot.
Also Demo is pretty much able to defend himself.
And Sniper dies from everything that will get close to him.
So we can say that they're on the same shelf.
