To be honest, I don't even remember that well what the start was all about.
Something about Celestia telling twi' about some age-old prophecy, with an enemy Celestia deems even stronger than she is and other stuff.
(Personally, I don't believe of that enemy to be stronger than an alicorn. A Goddess, immortal, several millenia-old, with fitting experience in magic and politics. What's your thought about that point, just out of curiosity?)

Celestia is not a god, she is rusty, she is not allmighty or omniscient. The Equestrian military is weak as shit and might not have actually witnessed wars and conflicts for several hundred years.
No I don't believe that Celestia is as powerful as the bronies make her to be. The Sombra timeline and the fight with Chrysalis showed that she has limits and she's not as strong as to best armies in one blow as people make her to be.

Well, to be fair, I can't prove it nor disprove it.
Not directly, at least.
She might be "just" very long-lived or immortal but,
as I think, this characteristic of the three first Princesses goes with godhood.
Has this been addressed by the show's staff and authors?
She's several millenia-old, she might need some "sparring", here and there, but taking her lightly,
with all her experience and knowledge in magic, would be a mistake.
A mistake I don't think Chrysalis would be fool enough to do, which is why she used Shining Armor's love for Mi Amore Cadenza to briefly stall, then vanquish Celestia (in the TV show).
But yes, no actual wars for hundreds of years - except maybe some limited border clashes - are bound to dull forces,
be it the Princesses' or the Equestrian Armed Forces'.
Now, about the Sombra timeline and the fight with Chrysalis - if we speak about the one that occured in the TV show, that is -
I don't think this would change anything about Celestia being the strongest, since being the strongest isn't being invincible and that even the best can fail.
Besting armies in one blow? Yes, I agree with you on that.
It sounds really, really over-powered. And also kind of too easy of a "deus ex-machina" effect in fan works.

It's cool. I just hate it when people assume Celestia is One Punch Man holding back. It's crazy how when Celestia is OP it's all nice and good but when villains are OP it's lame.

The heroes are made to be loved, as much as the villains are made to be hated, somehow.

Well it doesn't matter really. Strength means nothing if it's not used properly.
Strength is pretty much everywhere.
Whether it's muscle, magic, cunning, intelligence it all depends on how you use it.
I am currently writing about a changeling Princess who is doubting she has any strength. She's not a genius, neither is she as powerful as her mom Chrysalis or her father my changeling King OC Ao.
However she slowly learns that she has different strengths and advantages than others.
She has a strong unbiased soul, and knows the benefits of peace. She has strong leadership qualities like humility and her honesty. She is fast herself and agile.
See strength exists everywhere. You just have to open your eyes.
