Where to begin with this one...Engineer is a combination defense/support class, with a major emphasis on defense. The most offense they get is when they wield the gunslinger, and even then, they are still reliant on Combat Minisentries to fight due to their squishy hitpoints. A good engineer always relies on his buildings, no matter what role he's trying to fulfill - an engineer that tries to do it solo can even be bested by a medic of equal skill, even WITH the Gunslinger. The moment an Engineer fails to have the cover or aid of a sentry gun, he's in extreme danger to even the weakest of classes if they can play them right.
Applejack, meanwhile, is a headstrong, run-into-trouble type character, by my understanding. She's a rodeo pony, and seems to be physical if she's forced into any form of conflict. Far as I can tell, math isn't her game, and the most advanced technology she utilizes is an apple cart. The only building we see her take any part of is in raising a barn - and even that's spent mostly singing while everyone else does the work.
With the Engi's squishy hit points and aversion to direct confrontation, we immediately have a problem with this match-up. Applejack doesn't seem to me the type to rely on a machine to do her work for her. Maybe it's just me, though?
Don't get me started on teleporters.

The closest I've ever heard of Applejack coming anywhere near building anything was the Cutie Mark Crusaders' clubhouse - and even that I mostly just take other peoples' words for it (forgot the episode it was in, too lazy to look it up).Β Even when the Apple family is reconstructing the barn, she sings while everypony else does the work. xD

The pro both your cass matchups is that you don't realize the ponies have brains. These ponies can learn from their mistakes.
Let's just say for a min that aj was engy. At first, yes, she'd be like this. But then she get the hang of the class, and start playing it right. She'd realize that being headstrong isn't the answer, and she stop.
That is where the real canon takes place: when aj has learned from her mistakes and plays engy well.

The Engineer is about patience, strategy, and on-the-go thinking.Β Applejack might be able to learn, but she's more physical than the Engineer is.

Just because she's strong doesn't mean she's physical. It doesn't mean she charges into the fight.
Yeah, and I almost forgot. Demoman may be played often as an offense, but valve itself lists him as a defense. Same as engineer. While they may be tougher then engies, they were made with the intention of defense, which means they shouldn't be running into danger.

Meanwhile, Engi is squishy and can be killed by the Medic with relative ease if caught away from his sentry gun.

Also, you're aware that engineers CAN be badasses. trust me. I've seen an engineer dominate 3 people.

ANY class can be a badass; I've seen it AND played it (given I just got extremely lucky with the Widowmaker) but the thing is they're not built to be.Β They're glass cannons on their best day.Β Applejack strikes me as a pony who can take a beating, as well as dish one out.
I've seen a Battle Medic that was better than truly combat-oriented classes once.Β It was terrifying.

Widowmaker.
Allows Engy to fire nonstop without reloading, if he's a passable shot.
Admittedly won't do much against heavy, but will take out a scout if the engy's decently skilled.
He still can't quite run into danger, but it will reduce some squishiness.
also, Engy with gunslinger = 150hp. demoman with nothing = 175hp. Without the explosives, demo's almost as squishy as engy.

That maybe so, but it's not how the Engi is supposed to be played.Β Being a player of Battle Medics and Combat Engis, I normally don't care for the norm, but when it comes to these matchups, it has to be considered for the sake of making a more rational choice rather than saying 'My matchup depends on this one item's existence; hope Valve doesn't nerf it!'
Consider this; I play tested a few classes in Medieval Mode to come to these decisions.Β The Engineer is near useless without his buildings; a fact that almost won Fluttershy the class (which'd fit her shy nature, and dispensers fit her caring nature better than Medic's more 'aggressive' healing style), which she only lost because I didn't know if she mixed well with machines.Β Pinkie won because I knew she did.
A basic Demoman is almost as squishy as the Engineer; but he still has one of the highest health pools, tied with Pyro, with only the Soldier (who AJ almost was) and the Heavy having higher.Β He's one of the few classes with entire builds endorsing close-quarters combat.Β While he may not fit Applejack's accent, he fits her more assertive style.

It's not so much that...
Applejack, I have no doubt that she couldn't build something; but the question is could she build something like a sentry, teleporter, or dispenser? Secondly, does the Engineer class live up to her personal capabilities? There's an extent where you can ignore such things, but I felt the Engineer was too conflicting with AJ's skills.Β By putting Pinkie into the role, who does not really have known limits, and has been known to use gadgets, I felt it was a fitting move.

Though I agree Pinkie would make an excellent Soldier, I also have to disagree with the statement she'd be a bad engi.Β Besides the Flim Flam brothers, Pinkie Pie is the pony that makes the most extensive use of gadgets.Β She has her welcome-wagon, her candy-copter, AND her party cannon... and who knows what other wacky gizmos?

Why isn't Pinkie fit to be an engi? We have no idea what limits she has, besides maybe an inability to not be random.Β She uses gadgets, and she likes to throw parties (which the sentry nests could accommodate as a replacement for) and she does a little bit of everything.Β Seems to me, Pinkie fits better as engi than anyone.
While Twilight fits the 'smarts' portion of the engineer class, you must remember that the engineer is much more heavily a 'constructor' class.Β Twilight, in my mind, is smart enough to be the engineer, but his booksmarts seem to take the backburner besides his skill with building - and even then, besides the Dispesner (and maybe it) the Engineer doesn't seem to really be the one who designed ANY of his machines (his grandfather had the blueprints for the level 3 sentries, and the teleporters are suggested to be made by Australians.)
