So, after posting my quick microwave cake (chocolate version), several people asked me if there's a version without chocolate. Since I had never seen one, I set out to modify the recipe myself and here's the first result.

Ingredients:
2 tbsp custard powder
4 tbsp flour
5 tbsp sugar
1 egg
3 tbsp lemon juice
4 tbsp melted butter

Stir all ingredients together well, batter will be thick but runny. Fill into a cup and microwave for 2 to 3 minutes, depending on your microwave's power. (start with less, increase if not done)
This new recipe makes an extremely soft and moist cake. It doesn't rise as much as the chocolate version but it tastes very lemony and melts on your tongue.
Try adding fruit or nuts, if you like. I bet it would taste amazing with strawberries and almond slivers.

If you don't like lemon either, try using a liquor. Reduce the sugar and amount of liquor accordingly (for bailey's for example, you won't need a lot of sugar, maybe a bit more flour to even things out). Experiment a bit and let me know how it works out for you.

Hmm. Custard powder is the only thing I don't have in my kitchen. Is it strictly necessary? Can it be substituted with anything else? Let me know, because I want to try this cake~!

Sorry, only now got back. I'm sure you can substitute it with anything you like, maybe pudding powder or vanilla sugar and some more flour would work. Or leave it out and put less liquids in.

Should be available in most super markets... I think you can substitute with instant pudding, too.

It's not quite as good as the chocolate version, not as moist, but I love the lemon taste.

i made it but the batter was too liquid, i tried adding more flour but since iΒ΄m a awful cooker i didnt added too much and i think it wasnt enought,itΒ΄s tasty, but the texture isnt so good, iΒ΄m not sure if it was the flour or if i should microwave it for more time

Yeah, the cocoa powder is really missing. Mine worked out to a nice thick-ish batter, though. I think custard powder might work, I'll have to try around a bit.

You may want to try the updated recipe, it seems much better, though it's not quite moist enough.
