Although I fully appreciate Fenris' ferocious aspect, I still think this depiction adds to his character. There are rare the moments of resigned gloom, but he actually has those moments in game...for example in the mansion scene, where he admits "Ah, this isn't why I came here."

I think the contrast is one of the cutest things! Like that scene where you employ Orana, and he's really mad at you, and then Hawke is like "... I gave her a job, Fenris" and then Fenris gets all embarrassed. Looove that!

After all those years of abuse, he's naturally defensive towards certain situations (or pretty much anything, really 
The thing is he gets mad at your character because he actually likes him/her. His fear and self-doubt, however, dictate that you'll betray him sooner or later and so he sees "demons" everywhere. In truth, he challenges you and hopes that what you'll say or do will disprove his suspicion and he can grow to trust you (like the Orana scene you mentioned).
Mostly he's mad at himself, however, that he didn't figure it out and run away from Danarius earlier. And he wants your character to appreciate him for the person he is right now, not see the slave that he used to be.
Well, at least that's my mini-theory. What do you think?
