I wonder whether, like the X-wings, the popularity of the R2 series led to their technology being upgraded over the years. In the Legacy comics, we see R2-D2 brought up to spec with the latest technological advances

Yes, that would certainly go along with my way of thinking.  Even today, forward looking aircraft (like the F-22) are designed to be "technology transparent."  The idea is that they are designed to be modular, so that they can quickly and relatively easily be upgraded repeatedly as new technologies evolve.  That way, while the basic airframe remains the same, the capabilities of the aircraft can dramatically improve over its lifetime as new weapons, computers, radars, avionics, and perhaps even engines are developed.  It certainly seems like R2 units, (and even BB units) are designed with a modular philosophy in mind.  Perhaps it's for that very reason.  For R2 to have been in continuous service since before the time of the Clone Wars, through the era of First Order, it certainly seems like he must've had a number of upgrades.  As Captain Synn's astromech droid, R2-V2 has had some serious upgrades.
