I see alot of paint tool sai users using generally the brush tool. Is there a reason why not to use the pen or pencil tool?

There isn't, you can make the same settings as in brush in every tool you want. :'D

How do you draw that in photoshop? I can't make such pointy strokes?

you need a driver for your pen tablet that allows pressure strokes it make them fade and get pointy

How do you make the grass blades sharp like that? Because when I try stroking it, the blade is more of a thin stump, if you know what I mean.
Any advice on how I can fix that please? I'd be so grateful!

if you don't have a pen tablet with pressure sensitivity and a brush that strokes with it then all your lines will be one thickness
