I agree with you on the immortality-part. I wouldn't want to live forever...
As for Gaster... Nah, he never was aiming for anything like this and to be fair he's not really immortal in the Void; he just can't die due to the state he's in.
As you can see: In my head-canon the Void (which can also be explained in a scientific context, btw.) is a place in dimensional buffer-zone between two or more layers of the dimensions and in absolute zero-time; the middle between two wormholes, something like that. That means if you would enter it (and survive the way) your own "time" will be slowed down so extreme, you appear not to be aging. Another thing is that you will be "taken out" of your dimension and it's related laws of physics, which could cause effects of endless variations. But it also means that causality (cause and effect) will have no influence on you, yet those are necessary for change as well, because they too connect everything around and about us, as does time. 
The concept of time is a very complicated one, because it's not an energy or force, but a component quantity of various measurements used to sequence events. We can only tell time, by the way things change around us, so it's actually not the factor.
Sorry if this may sounds complicated. In fact, it's complicated as hell and sorry if I bored or bothered you with this.

Everyone feels trapped at some point and there's always a way out. It just takes time and effort. (just a revised version of something my friend told me. Though after they told me kept telling me over and over to never die...SO....Who knows if it was good to actually put. x3)
