The demographics are more of an etnicity thing, and as far as I understad, venetians aren't a separate type of people, they are part of the Italic people, for that there is the demonym which refers to the people who live in the Republic of Venice.
Also it fits with the SW theme of unity from humanity against the neuroi, so the less separation there is between ethnic groups, the better they fare against the Neuroi, so yeah, it's kind of intentional to label them as "Italians" it makes sense within the context of the series.

No, I've to contradict you... Venetians ARE a separate people, internationally recognized. Actually, only Italy oppose this fact!
We have our own Language (that exists from the old age, toghether with latin, while italian was "born" only during the reneissance), and we were an indipendent country for 1100 years (697-1797)...
