I didn't like his blue skin in the movie, because it looked terribly fake. I've seen it done a lot better in fanart.

*ponders*  Maybe the blue skin didn't look right in the movie for a reason.  Odin must have cast a powerful concealing spell on Loki when he was an infant, to make sure he didn't occasionally slip back into his original form over the years and accidentally reveal his true origins.  So when Loki is influenced by a Jotun's freezing touch or by the magic of the Casket, Odin's spell is struggling with the additional external magic over which form Loki will hold, and neither of the magics has complete control.  Odin's old spell isn't strong enough to completely overcome Loki's Jotun appearance, but it does affect it enough to make it look somehow wrong, somehow 'off,' which is why Loki didn't look as naturally Jotun as he would have if Odin's spell had been completely overcome.  Does that make any sense...?

Well, can't disagree there, unfortunately. Hopefully we'll see his Jötun form again sometime during Infinity War or beyond and they'll have improved it.
