I have an idea for a Pokemon roster of Ash's dad.

1) Mewtwo (as his partner & friend)
2) Charmander -> Charmeleon -> Charizard/Mega Charizard X
3) Kangaskhan
4) Sandshrew -> Sandslash
5) Slowpoke -> Slowbrow -> Slowking
6) Doduo -> Dodrio
7) Alola Rattata -> Alola Raticate

Well they would have had to have met in the Hoenn Region since that's where Delia would be from. So I think that 19 year old Will Ketchum would vacation to the Hoenn region. He and his friends, Gio, Flaxen (Father of Yellow), Richardson Oak, and Basil (Father of Green) arrive in Lilycove City, and venture to see many things not in the Kanto region like The Great Mall of Hoenn and the Lilycove Contest Hall. Delia was in the middle of a Cleverness contest battle with her Machoke and Marill. She won and Will was amazed by this trainer, not only by her battle tactics, but by her beauty as well. Will introduced himself and asked if maybe Delia could show him around Lilycove. Delia wasn't really into him and left Will at the contest hall. Later Will and his friends checked into their rooms at Cove Lily Hotel and found that it was run by Delia and her family. During his vacation week there, Will spent most of his time trying to impress Delia in order to get her attention and something must have worked because on the fifth day, she finally started to pay attention to Will and spend some with him. Pretty soon they start to fall in love, but their time together was short as Will had to return to Kanto to finish school. They stayed in touch through vid-calls throughout the years and see each other when they had long breaks of free time. They would stop doing this after Will would propose to Delia and she would accept and then move to Kanto.Β

Cool, I was thinking of doing that for Delia too, just to expand on her not just being only Ash's mom, because outside of that, I don't think we know much about her.Β
I was thinking that she would originally be from the Hoenn region and used to specialize in Cleverness and Toughness. My idea for her team in her younger years was Blaziken, Lombre, Marill, Machoke, Grumpig, and Tropius.
In her current age, she runs a restaurant after Ash leaves to go on his journey. It's called the Pallet House and her Hoenn Pokemon are the kitchen crew.Β
Blaziken keeps the stoves and ovens going.Β
Lombre evolved into Ludicolo and makes great coffee.Β
Marill evolved into Azumarill and is a great dishwasher.Β
Machoke evolved into Machamp and with its four arms, it cook meals really fast as the chef.Β
Grumpig is a busboy or buspig in this instance and clears the plates from tables and eats the scraps before handing it over to Azumarill.Β
Tropius provides fruit that naturally fall off its body.Β
Delia will also catch some pokemon in the Kanto Region that help at the Pallet House.
Beedrill for honey.Β
Vileplume to keep herbivore Pokemon away from the restaurant's garden.
Likitung for taste testing. This pokemon has 1,000,000 taste buds on its tongue.Β
Mr. Mime sweeps the restaurant.Β

I think I'll give him Ash a Dragonite for a 20 years later version of him. This grown up version of Ash would be sporting a team made up somewhat of his most current pokemon roster, so Dragonite and Gengar would be on his main team.
