Well, it's basically hours and hours of practice and learning, usually into the wee hours. Eventually, if you do something often enough, you get good at it.

Red hair is complicated. The way I do it is to draw some of the large shapes in the hair and fill them with gradient meshes and simple gradients. Then go over that with the brush tool, drawing hair strands in various red colors that match the person's color but also give it variation.

I have been doing some gradient mesh stuff and it takes forever.
If there is an easier way I would surely like to know.

The answer is that it just takes forever. Patience is the key. You might work on it for weeks before it's done. I do so many of them that I have a process that reduces the time somewhat, but it still takes awhile.

Meshes mostly. The hair is just regular paths with brush strokes.
