I'm not all that great with tutorials. A lot of people ask for them but I don't seem to be very clear in my explanations. But here is a basic rundown on how I do meshes, as told to another deviant here:
Draw a regular rectangle shape that very roughly covers the area you want to apply the mesh to. Then add one mesh row and one column by clicking in the center of the rectangle with the Mesh Tool. Then start shaping the outside of the mesh as close as you can get to the outside of the shape you're reproducing. Then add mesh lines as you need them until you have the exact outer shape you want. From there you add more mesh lines, adjusting them until all the various features in the interior of the object are covered by your mesh. It's a bit of an art to getting the proper amount of mesh lines to the shape - something you figure out with experience, but avoid removing mesh lines after you add them, as that tends to cause any neighboring mesh lines to go haywire.
Then you sample colors. You'll probably have to adjust the colors later, as the translation from raster to vector never goes smoothly, as I'm sure you know. Don't feel like you have to get an exact replication. It's never going to be exact. Just make it look good and relatively similar to the original image. From there, it's just refinements and adjustments until you get a product you're happy with.

Start off small and simple to get the hang of them. Then work your way into more complicated shapes. That's how I learned meshes.

Took a few days. I've got the process pretty streamlined now so they don't take as long as they used to. Unless I decide to procrastinate on them, which is still a problem. =/
