Description TIPS
If your chocolate does start to burn and go grainy you can add a few drops of vegtable oil to bring the chocolate back to a useable consistency.
You can melt the chocolate in the microwave however melting over a pan is much better to keep an eye on.
If you have a steady hand and are confident you can do the design straight onto your food providing it has a flat surface.
The webs are delicate so if making treats that need to be taken out of the house it might be a good idea if having them stood up to not add them to your food until you are where you are serving them.
If you have very hot hands, try cooling them in ice water before handling the webs as they melt very easily.
If adding webs on top of ganache you place them on when the ganache is still a little warm, this melts the webs slighly to get an extra clean look and lines.

Oh.. and I totally thought you did the webs directly on the cake.. wouldn't that be easier?

claremanson In reply to sparrowcrazy [2013-10-11 04:39:08 +0000 UTC]

Not at all, one slip up and you would have ruined your whole dessert

Hmm yeah I suppose you're right, mind you I'm not that picky if I just do them for myself and my family.. it'd still taste the same.

I always wanted to try doing these. Β I used to work at a chocolate shop. Β But were never did these, I wish we did!

claremanson In reply to gillianivyart [2013-10-11 04:39:28 +0000 UTC]

Did you do any Halloween chocolates there?

πŸ‘: 0 ⏩: 1

gillianivyart In reply to claremanson [2013-10-11 04:57:45 +0000 UTC]

We dipped Oreos, half dark chocolate, half orange confection. Β We handed them out and the kiddos loved them. Β But it would have been more epic with chocolate webs!

πŸ‘: 0 ⏩: 1

claremanson In reply to gillianivyart [2013-10-11 08:59:10 +0000 UTC]

But I guess a lot more time consuming

πŸ‘: 0 ⏩: 1

gillianivyart In reply to claremanson [2013-10-12 19:57:48 +0000 UTC]

Oh yes, we made a whole bunch of those, so yea, it would've been a lot of work. Β I miss that place. Β It was the Rocky Mountain Chocolate Factory. Β Our apples were amazing. Β I never got to make the fudge, I was too young to do the big copper pot so would have been a liability for them. Β We had a huge marble table and I got to help with the fudge process. Β

Oh I love watching fudge being made on tv, looks like great fun

gillianivyart In reply to claremanson [2013-10-16 03:26:34 +0000 UTC]

We used a big marble table with edge boards and some squeegee type plastic blades to mix as it cooled. Β We would add the ingredients and swirl it around till it solidified. Β Then put into long plastic storage containers to chill. Β Our backroom was basically a big cold storage, it was kept around 60 degrees, I think. Β Ah, I miss that place. Β  Β So, did they have a similar process on the show you watched?

πŸ‘: 0 ⏩: 1

claremanson In reply to gillianivyart [2013-10-16 07:00:31 +0000 UTC]

Yes, the same process, seen it a few times done that way on a kids cooking show and a couple normal cooking shows too

πŸ‘: 0 ⏩: 1

gillianivyart In reply to claremanson [2013-10-16 07:42:59 +0000 UTC]

Ah, kewl. Β I always want to have a big marble countertop since then. Β  Β I would love that.
