Are slimes classified as monsters like when it's on a survival mode, or are they more like animals like sheep and stuff that can come around on peaceful (wimp/me) mode?

They are monsters, so you cant find them on peacefull

They're monsters, seeing that they are eager to eat you alive :c (the larger slimes will sometimes split into smaller slimes under certain conditions)

They can come into the sunlight

And I dunno, they follow you around so it might be possible to trap them Not sure about them despawning though!

Small slimes can't do damage to you. They're more or less tame and won't die if you bring them to light. The thing is, they only spawn at depths where lava frequently spawns.

I made a bigger cavern in a multiplayer server, took legitimately dozens upon dozens of iron pickaxes, sad part was I was doing it for the Cobble and not the 50+ diamonds and piles of other ores...

I always either completely kill the big slimes, or then make then smaller and leave them alone. They make nice pets.

Some of this is incorrect. You could craft a bed and the water does not turn it into obsid only cobblestone. A good guide overall though!

It's not that hard ^^ Memorize at some circuts and maybe some weird stuff and you can be the toast of a server!

Lava source blocks become obsidian. Flowing lava becomes cobble. Natural lava pools are filled with source blocks, and pouring water on it will create obsidian.
