-what colors stand out from other colors? For example the red stands out of the blue, and viceversa.

Contrast is simply a matter of "difference".

Difference can be archived through Hue but much more important and effective than that is brightness and saturation, and even better through all three at the same time.
It's a good idea to keep everything low saturation and high brightness except the things that are supposed to stand out (at least if you want something to stand out.)

Your color theory helps a lot, but, can you please do a color theory that explains:
-What meaning can you a apply on every color (at least the basic colors)? ...for example, you can apply the meaning of 'Danger' on the color 'red', or heat / or 'Purple' for the 'Night' / or 'Blue' for 'Cold'..

I always have issues with colors, so every small or large bit of information about color theory is extremely helpful, thank you!
However I am doing my homework and do as much research on the topic as I can and for a while now I am starting feel that my head if full with theory, but when I actually sit down and try to put it in practice I fail big time. Mainly I get stuck at the very beginning when I have to chose the mood to my pic and the matching colours to that.
I'm just fine with greyscale, but when it comes to the saturation I feel like "I have no idea what I am doing", although if you asked me the theory behind it, I would probably be able to tell you about it. That's just so frustrating...
