[Updated] SNK vs Capcom 2 fan-made character select screenUpdate #1: Rehauled the entire screen
Update #2: added Genjuro, Marco, Mukai, Xia Long, Ai, Guy, Cody, Vergil, Chris Redfield and Hinata
Ok, I've decided to rehaul the screen entirely, because it feels a little too crowd, and it became more complicated to add more characters... so I decided to adopt a style similar to the original SvC Chaos screen.
Sprites are taken from the following sites:

I based myself on several factors to make this screen:
1) I went for characters that were in either or both Capcom vs SNK 2 and SvC Chaos: SNK vs Capcom. However, some characters were omitted:
SNK
* Earthquake from Samurai Shodown couldn't be found as a HD sprite.
* Hibiki from Last Blade 2 couldn't be found as a HD sprite, but I found Kaede, Last Blade's main character, instead.
* Mars People couldn't be found as a HD sprite, but I found Marco and Fio from Metal Slug instead.
* Todo couldn't be found as a HD sprite... sorry folks.
* I could have used KOF13's Mr. Karate... but I went with Takuma instead, by personal preference.
* Orochi Iori couldn't be found as a HD sprite. However, I prefer one version per character. That also explains why Shin Akuma, Evil Ryu and Violent Ken are not in the screen.
Capcom
* Eagle, Kyosuke (both from CvS2), Tessa and Firebrand (both from SvC Chaos) couldn't be found as HD sprites... sorry folks. I found Hinata from Rival Schools as a replacement for Kyosuke though.
* I did find a HD sprite of MMZ Zero, but went with MMX Zero instead by personal preference. (I don't need to get reminded of that annoying anti-air move.)
* Shin Akuma, Evil Ryu and Violent Ken couldn't be found as HD sprites. However, I prefer one version per character. That also explains why Orochi Iori is not in the screen.
2) I kept the roster "realistic". I did find a lot more characters from both sides (at least 50 for Capcom and at least 80 for SNK), but I limited myself to 36 characters per side. Oh, screw it!Β The tally is now 43 per side.
3) I followed both games' selection process, which is basically to fill the roster with many characters from King of Fighters and Street Fighter and then fill the blanks with other characters from other series.
4) I went with 2d sprites, since it's called "SNK vs Capcom 2" and SNK Playmore is currently using HD 2D graphics for the KOF series. If it was "Capcom vs SNK 3", I would have used still images of characters 3D models since Capcom is currently using 3D graphics.
5) I tried to use homogenized sprites (emphasis on "tried"), like SNK did for SvC Chaos. Capcom vs SNK 2 did it wrong. Let me explain: Capcom had to make all sprites for the SNK characters... but only remade Ryu, Ken and M.Bison and made Kyosuke, Maki and Eagle. The rest of the sprites is all ripped from Street Fighter Alpha 3, and Darkstalkers for Morrigan XD. Yeah... couldn't they have remade all sprites from Capcom instead of just a few ? I mean, if you have to make from scratch all the sprites from one side, might as well do it for the other side entirely.
6) I tried to go with multiple series for both sides (MAJOR emphasis on "tried"). KOF by itself is a crossover between multiple SNK fighting series, and I've added Samurai Shodown, Last Blade, Metal Slug, and Neo Geo Battle Coliseum... which are the only SNK series that I could find HD sprites of. Same goes for Capcom, as I did add characters from Street Fighter 2, 3, 4 and Alpha. I also added characters from Devil May Cry, Classic Mega Man, Mega Man X, Darkstalkers, Resident Evil and Asura's Wrath, again which are the only Capcom series that I could find HD sprites of.
7) After adding returning characters, I added more characters on both sides, by personal preference. I did find a lot more, but this is also a wishlist of mine. I also added bosses on the screen (Rugal, Geonitz, Geese, Ash and Mukai for SNK; M.Bison, Jedah, Juri, Akuma and Vergil for Capcom).

I think Niitsuma just picked his Capcom favorites and Let Marvel do the same. However, Marvel didn't screw fans that much with their selection.
The inclusion of Phoenix Wright is a little hypocritic, because they said that they couldn't add him to TvC because of the speech bubbles. Wait... it didn't work because of the Wii, but can work because it's on PS3/X360? I'm glad he's in, but Niitsuma doesn't seem to be consistant, nor viable, with his excuses. Take the exclusion of Mega Man for instance:
Niitsuma: "We wanted different playstyles."
Us: "and yet you have both Ryu and Akuma?"
Niitsuma: "We didn't have references for Mega Man Classic."
Us: "and yet you have MvC1 and 2 sprites, and TvC's Volnutt?"
Niitsuma: "Volnutt would have been hard to port."
Us: "and yet you have both Viewtiful Joe and Zero from TvC, and to lesser extent, Frank West?"
Niitsuma: "Mega Man would have been hard to integrate."
Us: "and yet you have both Ghost Rider, which you said that you couldn't add in MvC3 because of his bike, and Phoenix Wright, which you said that you couldn't add in TvC because of the swapping letters in his speech bubbles?"
Niitsuma: "Inafune left us."
Us: "and you're still in charge of the whole project, like you were, alone, for TvC?"
Niitsuma: "We had problems with licenses."
Us: "and yet you have Mega Man, Proto Man, Roll and Beat in Nova's ending, in addition of having Zero and Tron Bonne, and you added Strider, which was a multi-licensed character?"
Niitsuma: "I would have liked X in the game"
Us: "then why did you add him as a DLC costume to Zero instead?"
Niitsuma: "Mega Man was this close to making the roster."
Us: "and yet you added unpopular characters like RE5 Jill (compared to her unpossessed form), Felicia, Hsien-Ko, Trish and, to a lesser extend, Spencer (his last game didn't sell that well) instead?"
Niitsuma: "I don't have the time nor money."
Us: "If it's for a post-release content as popuplar as Mega Man, surely you do."
Niitsuma: "I wanted one character per series."
Us: "and yet you have 3 from Darkstalkers, 4 from Resident Evil, 2 from Ghouls n Goblins, 3 from Devil May Cry and 2 from Super Street Fighter 2 (that's Chun-Li and Akuma BTW)?"
Niitsuma: "Mega Man has a different name in Japanese."
Us: "and yet you have Phoenix Wright (Naruhodo), Akuma (Gouki), Hsien-Ko (Lei-Lei) and Firebrand (Arremer)?"
Niitsuma: "The Mega Man series isn't popular enough."
Us: "and yet you have Zero from the popular Mega Man X series, but you have Tron Bonne from the somehow popular Legends series which only had three games from 2 gen earlier (PS1, Dreamcast, N64) in total, in addition of having a few other characters who hasn't got a new game recently?"
Niitsuma: "I don't like Mega Man."
Us: "and yet you market him like never before with cameos and references?"
Niitsuma: "Mega Man isn't popular among the fans."
Us: "and yet he still comes out on top on every poll the Internet poured out lately?"

Yeah, someone needs to plug him to a polygraph, because I can't find any valuable reason why he wouldn't, couldn't and shouldn't have included Mega Man in UMvC3.

Very nicely done organized compilation of the sprites. Most folks just hobknob them all over the place, but this one at least tries to pay homage to the original crossover with them all side by side.

I did find a HD Shingo sprite, but not a KOF HD-styled Sean, sorry...
I agree that Shingo should get another shot at KOF 14 and Sean at an upgraded version of SSFIV though.

Apparently, producers have subordinates that tell them to put a stop on their selection process. For instance, Yoshinori Ono wanted to add Rolento, Elena and R. Mika for SSFIV... but his battle director told him "no"...

For Metal Slug, I picked Fio, the girl with the light green cap, who is next to K'. Fio was also in KOF: Maximum Impact 2 as a bonus character [link] What a coincidence
As for Cammy, well, like I explained, I tried to pick everyone who were in CvS2 and/or SvC Chaos, and Cammy was in CvS2 ^^. However, I couldn't find her Alpha outfit for the sprite, but just between you and me, I prefer her Delta Red/regular green outfit.

The reason why I hate Killer Bee Cammy is because she's still enslaved by Shadaloo. As a Delta Red member, she has been freed from Bison's grip and much more independant, self-aware and headstrong. I mean, she was created by Shadaloo (the 12 Shadaloo dolls were brainwashed kidnapped girls), she technically could be suffering from a trauma that she's not a real human being... but no, she just ditches her past and move forward, forging her own identity along the way. Hell, she even adopted that sexy and classy British accent (kudos to Caitlin Glass for her English voice ^^), when she's not even British herself, just by living in England while working for Delta Red. She's probably the character with the highest determination of the whole roster.
Yes, Ryu and Ken lost their mentor Gouken to Akuma (who we then learned that he survived in SFIV), Chun-Li lost her father to Shadaloo and Guile lost his friend and mentor Charlie to Shadaloo (although rumors have it that Charlie is still alive; guess how Seth learned Sonic Boom... ?), but revenge is nothing to simply living of your own free will, like Cammy does. She wants to rights the wrongs of Shadaloo's doing, but she'll always be a woman whose past is downright a living Hell... and she moves forward regardless.

There's too many Street Fighter's, and I think for crossovers, it should be limited to 40.

Oh I get it... well, like I say, I followed both companies' notorious ways to fill rosters, which ended up with more KOF and SF characters than any other series. Take either Capcom vs SNK 2 or SvC Chaos, they both have this little problem. Furthermore, I couldn't find HD sprites from other series.
As for the number, that one can be hard to respect. Add too little to get balance but rage from fans, or add too much to get praise from fans but unbalance. If both series have small rosters, then I supposed it could work, but again, fans of both series aren't gonna be satisfied until THEIR characters make the cut.
Samurai Shodown 6 had 52 characters, Street Fighter x Tekken has 52, MvC2 had 56, Mortal Kombat Armageddon has 64 and Tekken Tag Tournament 2 is rumored to have 66 characters for the home consoles (they're at 52 characters at the moment). Add DLC to the mix, and fighting games are gonna get bigger and bigger, crossovers or not. A Street Fighter All-Stars game with all characters from all games plus Final Fight would end up with 80 characters.
I understand that crossovers should have a cap... but that cap you're wishing for will have to increase over and over.

Well, then again, now that you mentioned the other crossovers, I guess crossovers have gone 50+.
Anyway, the roster seems like too much, what about the storyline? The unofficial one that I read from the Chinese Manga was that you have to be dead in order to join the SvC world.
