I thought it was a microphone mesh, and then I though it was a grill. Now I don't know. The mystery remains.

As LewisPatrick said, GIS = Google Image Search.
As far as the stainless steel "thing" goes, what advantages does stainless have over glass or ceramic?
Cheaper?
Easier to clean?
Easier to use?
More hygienic?
Imparts a better flavour?
Burns more cleanly?
All of the above?

Cheaper.
Just as easy to clean.
Fitting them into the bowl is more difficult.
Perfectly sanitary, so long its kept clean, but that goes for any smoking tools.
No difference in flavour.
Definitely keeps ash from getting through.

Mmmhh looks like a knurled screw for me, but the part on the left looks a bit irregular so i guess i'm wrong with that. But it must be something with a grip.

Wire mesh, bent or curved slightly, and with what looks like burnt material on it. Perhaps a filter.
Beyond that, I haven't the foggiest.
