1) Applejack eventually decided to stop touring full time and settle back down in Ponyville. She occasionally still does concerts, but in more local cities around her hometown. Cheerilee had always been a big fan of Applejack, having a little bit of a schoolgirl crush on her, so when AJ came back to Ponyville and started doing more lowkey concerts there, Cheerilee went to every single show.

Cheerilee finally decided to talk to AJ after one show and Applejack - who would never forget a face - expresses "Hey, you were Applebloom's teacher, right? Cheerilee? So nice to see ya!" and Cheerilee is overjoyed that Applejack remembers her even though she hasn't been in town for a while. Cheerilee does her best not to fangirl which AJ deeply appreciates since she's never really been good with the whole having fans part of being famous. (okay, Cheerilee does fangirl a little bit)

The two become close as AJ gets used to being back in the small town, AJ comes and teaches some music lessons at school and all the kids love her. AJ also brings Cheerilee little snacks throughout the day, and before they know it they're dating and then getting hitched.

2) Lightning Dust actually becomes a Wonderbolt in this AU (without Dash to stop her) and she never really fully humbles, but the rigorous stunts and training combined with a few accidents of her own - one that almost ended her career - made her at least a little more careful. A little. She pushes the Wonderbolts to try things they've never attempted before, and actually becomes quite an innovator. Her and Spitfire constantly butt heads, even resulting in Lightning Dust temporarily quitting for a while, but the two get along well at the end of the day. (They also dated for a short period of time)

While she thrived in the skies, Lightning Dust was not as good at events. She's loud and brash and doesn't really have "manners", so the upper class don't really like to invite her. Spitfire insists that if the Wonderbolts attend, all of them attend. Lightning Dust tries, she really does, but she always says what she thinks, which is off putting for a lot of the other ponies.

Rarity, however, finds it rather amusing. At first she thinks Lightning Dust is just another cocky athlete, but when Lightning Dust tries to hit Rarity up (as she always does with pretty ponies at events), Rarity can see past the cockiness. Plus, her stories about the other Wonderbolts make Rarity laugh louder than appropriate, which makes Lightning laugh when all the heads turn. Curious about what the pegasus is hiding under all that showmanship, Rarity gives her a chance.

Rarity, after spending a few dates with Lightning Dust, finds a deeply insecure pony under all that attitude. One that can't accept her own flaws, so she just makes everyone focus on what she's good at. Rarity definitely knows the feeling well.

Lightning Dust isn't used to getting a second date, really. Usually ponies are just so excited to get a chance with a Wonderbolt and leave it at one night. Not that she's complaining, she doesn't need anyone to scrutinize her for too long anyway. So why's this Rarity so interested in actually getting to know her?

It is kind of a nice feeling though. She could get used to it.

3) Twilight Sparkle is a hopeless romantic, one who never really knew how to actually have a proper love life because she always has an idealized version of ponies in her mind. She had honestly kind of given up on searching.

Except, of course, she never thought about one of her best friends Donut Joe that way. His shop is one of her favorite places to write her cheesy romance novels.

Their story is pretty simple. Joe finally realized that his subtle flirting wasn't quite getting through to Twilight, and finally just straight up had to tell her that he was basically in love with her. Twi definitely was too flustered and thought it was a joke (a joke that had definitely been played on her during her schooling days), but Joe was genuine. All of the love interests that Twilight writes since always seem to share the quality of smelling like fresh coffee...
