Description It's been a long time since i have had the motivation to write up a proper tutorial rather than just stick the recipe in the description of my photos but this was the motivation i needed as the possibilities for the choice of fruits and how to serve it is brilliant all year round for snacks and desserts. Monday i made a banana version for a snack, today a peach version to be served warm with custard for a warming autumnal dessert.

There is one thing i forgot to add to the recipe, if making a gluten free version (which is what i always do) add a tsp of Xantham gum to the flour for better texture and moisture.

If you make it, I would love to see it so, here is another tutorial for basic food photography.

Hello! I used your tutorial and made an upside down cake of my own: adoettei.deviantart.com/art/Up… Thank you for this tutorial as it made an amazing cake which was delicious and my whole family enjoyed it. I think I will continue on and try to make more recipes like this, and follow your other tutorials. Obviously they lead to great things.

how long does it take you to write up a tutorial usually?

claremanson In reply to theresahelmer [2013-03-12 09:37:21 +0000 UTC]

It depends on the recipe, it used to take me literally hours when I first started but I'm now used to doing it plus I keep the background as a kind of template that i can change the colour of and size of to suit the next tutorial. It's even quicker if you don;t have any making of photos and is just standard writing as it saves a lot of messing around. I'd say it tastes me 30-40 minutes average now, slowly getting quicker.
If I am completely lacking time I will just write it up in the description like one I will be posting at the end of the week for a banana cheesecake, that only took 5 minutes.
Also writing out a tutorial is quicker and easier if you do it when it's still fresh in your mind so within a couple days of baking.

you really have to be very motivated over a certain recipe/tutorial to do it, some I think I will make a tutorial over but end up can;t be bothered too! It's a nice little tutorial by the way, simple to follow and easy steps to remember, good work

Oh well, trial and error on my part

ProlixBlonde [2012-09-14 23:44:00 +0000 UTC]

FYI for all: If you're using pineapple you cannot use fresh. You must use canned or cook the fresh pineapple. There's a chemical in the pineapple that will ruin the cake if you don't.

claremanson In reply to ProlixBlonde [2012-09-15 07:47:21 +0000 UTC]

just like with jell-o then. It never even occurred to me to use fresh pineapple, i don't see it much in my country and it is very expensive and not always nice when it is available plus i'm not a fan anyway, maybe i would think differently if i could get it fresh.

👍: 0 ⏩: 1

ProlixBlonde In reply to claremanson [2012-09-15 18:18:23 +0000 UTC]

Yep. Just like with jell-o. You can never really get pineapple "fresh" unless you go pick it yourself or the plantation is right down the street. The pineapple found in most groceries that people think is "ripe" is actually fermenting/beginning to go.

The things you learn in culinary school. Apparently the best way to get fresh pineapple is to get it frozen. So says one of my instructors.

claremanson In reply to ProlixBlonde [2012-09-16 04:59:48 +0000 UTC]

interesting, can you buy pineapple frozen in your country? can;t here in any shape or form which is a shame.

👍: 0 ⏩: 1

ProlixBlonde In reply to claremanson [2012-09-16 20:00:38 +0000 UTC]

I think we can, otherwise my instructor wouldn't have mentioned it. But I think it's rare (I've never seen it in regular grocery stores). I bet I could get it through a food supply company for restaurants or bakeries.

That looks great. I'd love to try this. o:

But question: is it really sweet? DX

claremanson In reply to MissFero [2012-09-14 05:19:55 +0000 UTC]

only if you had a bite of the caramelized part on it's own, eaten all together is a lovely balance
